My friend Jenna and I both agreed to have date nights every week. We spend our time dancing to K-POP, talking about our biases, sharing a general dislike for the word "moist" and making food. We decided to make a Korean dish that we saw on an episode of SHINee's Hello Baby and it turned out great!
What you need to make Korean Rice Cake soup: one pound of rice cakes (definitely not the thin, airy snacks you're thinking of), six cups of meat broth (but since I'm a vegetarian we definitely substituted it with veggie broth), two scallions, two fried eggs, seaweed (but we didn't put it in since it gave it a fishy taste), soy sauce and pepper. Because I also bought kimchi while I was at the market, Jenna brought rice with her and we had rice on the side with the delicious, spicy kimchi. It was definitely a meal of champions since we added Italian bread as well. It is seriously one of the most delicious meals I have ever had.
Hopefully I'll have it again when I go to Korea in two years! :)
Afterwards we did dishes (which took forever) and then we made cute cupcakes. Hopefully I'll post photos of them tomorrow.
